This recipe is so easy, yummy and healthy. I thought I would need something on the side but it was filling enough on it’s own.

30 minute Roast Veggie Bake

Serves 2


Olive Oil
1 aubergine (egg plant)
4 large tomatoes
1 courgette
3 cloves garlic, minced
1 ball mozzarella
Handful of fresh basil
Salt & Pepper to taste








Preheat your oven to 180 degrees celcius.

Slice the aubergine, tomatoes and courgette into approx 1cm thick discs. Roughly chop the mozzarella ball into small chunks.

In an oven proof dish put a layer with half the aubergine, followed by half the courgette, and half the tomatoes.

Sprinkle half the minced garlic over the top.

Repeat, then put the mozzarella over the top with a good lug of olive oil, the basil leaves and season well with salt and pepper.

Bake at 180 degrees for 30 mins or until the cheese is melted and golden.
