This is again a super easy, super fast and awesomely delicious recipe that I keep coming back to time and again.

Yummy Olive & Feta Gluten free Italian dinner

Olive Oil
Gluten Free Pasta
Punnet of Plum or Cherry tomatoes, whole
5-6 cloves of garlic, whole
Handful of fresh basil
Handful of spinach
Handful of olives, sliced
30g feta cheese
Salt & Pepper to taste








Preheat your oven to 180 degrees celcius.

Put your plum tomatoes, garlic cloves and basil in an oven dish and cover in a good lug of olive oil. Place in the oven for 25-30 mins until fragrant.

Cook your gluten free pasta as per the package instructions.

Slice your olives – I actually got garlic stuffed olives so this is a super garlicy and delicious recipe! Don’t worry the roasted garlic is very subtle and adds lovely flavour to the dish.

Take your tomatoes out of the oven, and tip everything (including the garlic & oil) into a pan on a medium heat. Throw the spinach and olives into the pan and cook until the spinach is wilted (about 2 mins).

Drain the pasta (reserve the water it’s cooked in). Add the pasta to the pan along with the feta cheese and season it to taste. Add a splash of the reserved pasta water – as much as needed to make a bit of a sauce from the tomatoes and feta.

Toss together well and serve when the feta has oozed into the dish.
