I never had much of a sweet tooth but ever since going off sugar, I’ve had cravings for sweet things now and then. I’ve never really baked much so it’s all a bit of trial and error for me but this recipe is a definite keeper. These sugar free and gluten free cookies aren’t exactly like the real thing but they sure satisfy my sweet cravings 🙂
For some reason when I wrote down this recipe it was all in cups so you’ll have to convert yourselves. I actually recently bought a set of cup measures because I was so sick of opening up yummy recipes online only to have to convert every item to grams / ml. I highly recommend you do the same 😀

Yummy Gluten Free & Sugar Free Cookies!

Makes about 16 cookies
Ingredients
1/4 cup buckwheat flour
½ teaspoon baking soda
1/2 cup almond butter*
5 tablespoons avocado “butter” spread, melted**
1 tablespoon coconut oil, melted**
1/2 cup stevia
1 large egg
1/2 teaspoon pure vanilla extract
60g (½ cup) nuts of your choice, roughly chopped
Substitutes
*other nut butters will work too, I just love this one
** or any non-dairy butter this is just the one I use
Directions
Preheat your oven to 180 degrees celcius and prepare a baking sheet with greaseproof paper.
Mix together your flour and baking soda and set aside for now.
Use a large bowl or electric mixer to beat the nut butter, melted butter and stevia together until well mixed.
Add in your egg and the vanilla essence and beat until smooth.
Gradually add in the flour mixture little by little until well combined.
Chop up your choice of nuts and stir them through the batter.
Put tablespoons of batter on your baking sheet – an inch or two apart.
Bake for 12 mins under golden, et voila!
