This is a yummy and satisfying breakfast that gives you a great kickstart to your day. You’ll notice most the ingredients below are optional, that’s because it’s really flexible and can be made with whatever you have in your pantry.
Gluten Free Overnight Oats

Serves 1
Ingredients
Gluten free porridge (I like Kelkin)
Unsweetened almond milk
1 tbsp chia seeds (optional)
1 tbsp stevia (optional)
Handful of blueberries
2-3 tbsps Almond butter (optional)
2 tbsps ground flax (optional)
Coconut syrup (optional)
Directions
Put one measure of gluten free porridge for every 2 measures of almond milk in a bowl.
Add your chia seeds to the bowl and mix well.
Leave your porridge overnight in the fridge.
In the morning, take out your oats and if it’s too dry add a little more almond milk and stir to loosen it up. Stir in your stevia if you like your porridge a little sweeter. Read my post here to see what stevia I use.
Put your blueberries, almond butter, ground flax, and drizzle your coconut syrup on top.
