I love my food but sometimes I want just a little bit more and it’s better to fill up on a side salad than on more carbs. So I’ve become quite adept are creating quick and easy salads to go with any meal. This simple vinaigrette takes no time at all and adds so much flavour to my salads.
2 minute vinaigrette
Serves 2 salads
3 tbsps organic extra virgin olive oil
1 & 1/2 tbsps apple cider vinegar (or lemon juice)
1/2 garlic cloves, crushed
1/2 tsp dried oregano (or herb of your choice)
1/4 tsp Colman’s mustard powder
Pinch red chilli flakes (optional)
1/2 tsp agave syrup (optional)
Rock salt & black pepper
In a small bowl add together all of the ingredients and stir thoroughly. Serve immediately on a side salad of your choice – it’s that easy!
I sometimes put the leftover dressing in tupperware in the fridge and bring it to work with me the next day with a salad. Simply shake and serve.
