My favourite food of all time is pasta and there’s nothing better than after a long day at work than a quick meal. This pasta sauce is my go-to for those days when I don’t have time to slave over the stove and need to get dinner into me quickly.
Homemade tomato pasta sauce

Serves 2
Ingredients
Gluten free pasta
1 onion, chopped
2 garlic cloves, crushed
1 tbsp olive oil
1 tin (400g) tomatoes
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp dried basil
1 tsp dried oregano
1 tsp agave syrup (optional)
1 tsp vegan butter (I use Low Low avocado oil spread)
Rock salt & black pepper
Directions
Boil water and cook your pasta as per the packet instructions.
Meanwhile, saute the onion and garlic on a medium heat with the olive oil for a few minutes until softened.
Add your tin of chopped tomatoes, the tomato paste, paprika, herbs and agave syrup (optional) to the pan and simmer on a medium heat for 10 minutes. Salt and pepper to taste.
Drain your pasta conserving about a ¼ cup of the pasta water.
Stir the vegan butter, pasta and pasta water into your sauce and leave on a low heat for a couple of minutes.
This dish is best served with fresh basil and vegan parmesan if you have them.
