I’m a big fan of meals that are tasty, fast and delicious – and this ticks all three categories. This is my go to meal after a hard day at work. Give it a try and see what you think.

Tomato, Basil & Mozzarella Pasta

Serves 1


Olive Oil
Gluten free pasta
2-3 cloves garlic, minced
1 can chopped tomatoes
1 tsp paprika
1 ball of mozzarella
Salt & pepper to taste
Handful of fresh basil & more to serve


Prepare your pasta as per the package instructions.

Roughly chop or rip up your basil leaves (keep a couple leaves for on top) and set aside.

Put a good lug of oil in a large saucepan on a medium heat. Add the minced garlic to the pan for 1 min until fragrant.

Add the chopped tomatoes, basil and paprika. Leave to simmer on a low heat for 15mins. Salt & pepper to taste.

Roughly chop up the mozzarella. Drain your pasta.

Add half of the mozzarella to the pan along with your pasta and stir until everything is combined. Leave for 1-2 mins until mozzarella is gooey.

Serve in a bowl and put the rest of the mozzarella and basil leaves on top.
