This is again a super easy, super fast and awesomely delicious recipe that I keep coming back to time and again.

30 minute Italian Gluten Free Pasta dish

Serves 1

Ingredients

Olive Oil
Gluten Free Pasta
Handful of Pine nuts
Handful of Sesame seeds
Punnet of Plum tomatoes, halved
2-3 cloves of garlic, minced
Handful of spinach
Handful of black olives, whole
Handful of fresh basil
30g feta cheese
Salt & Pepper to taste

Directions

Cook your gluten free pasta as per the package instructions.

Put the pine nuts and sesame seeds into a dry pan on medium heat, stirring frequently. Toast until they are golden brown – about 3 mins. Remove from the pan and set aside.

Put the plum tomatoes into the pan on medium to low heat with some olive oil and cook for 10 mins until gooey.

Add the garlic and basil and cook for a further 2 mins.

Add the spinach, olives, feta cheese and season to taste. Cook until the spinach has wilted and the feta is gooey – about 3 mins.

Drain the pasta (reserve the water it’s cooked in). Add the pasta to the pan along with a splash of the reserved pasta water – as much as needed to make a bit of a sauce from the tomatoes and feta. Toss well together and remove from the heat.

Put your toasted nuts and seeds on top to serve.
