Courgette pasta or Zucchini noodles or Zoodles, whatever you call them, are a great way to have a filling and tasty meal with no carbs whatsoever. You’ll need a spiraliser but they aren’t expensive and when you’re on such a restrictive diet it really does help, so go buy one now!
15 minute Pesto Zoodles!
Ingredients for the dish
1/2 Courgette (Zucchini)*
Handful plum tomatoes (I used San Marzano)
30g Feta cheese
2 garlic cloves, minced
Handful of fresh basil
Smoked salmon (optional)
Salt & Pepper to taste

Handful each of sunflower, chia, sesame & pumpkin seeds
2 large packets of fresh basil (the more the merrier!)
150ml olive oil (keep approx half set aside)
3-4 garlic cloves
*I find that 1/2 fills me plenty with the rest of the ingredients but feel free to use a full courgette if you want.
Spiralise your courgette, put it in a colander with plenty of salt to remove some of the moisture and set aside.
Roughly chop your kale, feta cheese and smoked salmon (if you’re having it) and halve your plum tomatoes.
Put some olive oil in a pan on a medium heat, add in the kale and saute for a couple of mins until soft.
Add in the tomatoes, garlic, basil and spinach and saute for 5 mins stirring it occasionally.
Throw in the feta cheese, about 3 tablespoons of pesto and spiralised courgette. If it’s too dry add a dash of water. Mix together and season to taste.
Serve on a dish and put the smoked salmon on top, et voila!
