This is a quick and simple recipe for lunch or just a hearty snack for the afternoon.

Simple Avocado & Mozzarella Melt

Serves 1


2 slices McCambridges Bread (or similar sugar-free, yeast-free bread)
Sundried Tomato Pesto (or similar)
4 cherry tomatoes
9 slices cucumber
4-5 fresh basil leaves
1 avocado
1/2 ball of mozzarella
Salt & Pepper to taste


First slice your avocado in half, remove the pit and cut it into slices. I use a tablespoon to scoop these out of the shell and set aside.

Slice your cherry tomatoes, cucumber, basil & mozzarella and then set aside.

Grab the McCambridge’s bread and put a good serving (about 2 tsps) of sundried tomato pesto onto each slice.

Place the tomatoes, cucumber, basil, avocado and mozzarella on top.

Place under a hot grill for 3-5mins until mozzarella is gooey.

Apply some rock salt and black pepper to taste.
